Got some inspiration from neighbours down the road. They held a pig roast in tandem with a house warming for a decidedly on-grid home that had been over a year and a half in the making. The home featured the work of friends, fine local craftsmen, in everything from the woodwork and tiling to the drywall. The couple had paid their dues, building several structures in the area through the years, starting with a modest, off-grid cabin. What such a house reminds me of, is the simple fact that, whatever the benefits of off-grid living, the grid is good.
Hot water poured forth with the simple turn of a tap. Lights illuminated every inch of the two story, two thousand square foot-plus home. Plenty of juice for the DJ’s sound equipment. The toilet hadn’t been hooked up yet so there was still a foot in off-grid living as guests humped off to the outhouse or found a convenient tree.
Apparently, one of the co-hosts was up at 3:30 in the morning to get the 130lb pig roasting on the spit. It had been stuffed with pineapples and mangos. Many of the hundred-odd guests brought food as well, so a vast outdoor table laden with food sat next to the dedicated table mounded with pork. In the middle was the pig’s head, the mouth stuffed with an apple, of course.
